Taking and leading charge of the kitchen, in the head chefs absence. Must be strong on grill or range. Keeping the kitchen environment safe and hygienic. Assisting the head chef when it comes to writing menus and creating new recipes. Training and guidance of the commis chefs. To follow the companies systems and training procedures. Minimising waste by ensuring proper stock rotation and looking after raw meat larder. Ensuring the quality of the deliveries and the food sent out. The position is straight shifts 9-5 or 4-11. Minimum Requirements. 2 years as a Junior Sous or Sous in a Gastro/ Brasserie/Bistro background. Strong on Range, Grill and Sauces. Exposure to Meat Cuts and Exact Cooking Temperatures.
